Maggie’s Menu: Weeknight Baked Chicken Parmesan

Message from Maggie: Chicken parmesan is my Italian husbands favorite. For a weeknight, healthier solution try this baked chicken parmesan.
Ingredients:
- Breadcrumbs (Note: I use Aleia’s gluten free Italian breadcrumbs)
- Olive oil
- Egg
- Chicken breast (Note: I like the thin version since they cook quickly)
- Egg
- Part skim mozzarella cheese, sliced
- Marinara
- Basil (optional)
Instructions:
- In a large pan, brown breadcrumbs using olive oil.
- Crack and whip egg in a small bowl.
- Dip chicken breast in egg.
- Place chicken breast in bread crumbs covering.
- Place in oven at 350 degrees until chicken is nearly cooked through.
- Add mozzarella slice and allow to continue cooking until thoroughly cooked through.
- Warm marinara.
- Spread marinara on plate.
- Place chicken on top of marinara and add additional marinara on top of chicken breast.
- Top with basil (optional)
Allergies:
- This recipe is gluten free if you use gluten free breadcrumbs.
- This recipe is dairy free if you omit the cheese.
