Maggie’s Menu: Tomato Tart
Message from Maggie:
Mr. Magpie requested a hot appetizer the night we hosted his family. I came up with this semi-homemade tomato tart for his family to enjoy.
Ingredients:
- 1 uncooked pizza dough crust
- About 2 medium tomatoes (2 medium should work)
- 1 egg, beaten
- 1/2 cup parmesan cheese, shredded
- 1/2 teaspoon salt
- 1 fresh mozzarella cheese ball, cut into thin slices
- 2 Tablespoons olive oil
- 2 cloves of garlic, minced
- 3 Fresh basil leaves, chiffonade
Instructions:
- Roll out dough on a baking sheet and curl edges to create a crust.
- Slice tomatoes thin and place on paper towel. Sprinkle with salt. Let sit for over 30-45 minutes.
- Brush dough with beaten egg.
- Cover dough with shredded parmesan cheese and poke with a fork all over.
- Place dough in a 425 degree oven and bake for 20 minutes.
- Let cool a bit.
- Meanwhile, use a paper towel to dab off the liquid on the top of the tomatoes.
- Alternate lines of tomato slices and mozzarella cheese.
- Mix olive oil and garlic together and brush on top of cheese.
- Bake the tart for 10-15 more minutes.
- After removing from oven sprinkle with fresh basil.
Yields about 10 slices
