Maggie’s Menu: Taco Prep Bowl
Message from Maggie:
Mr. Magpie is loving this prep bowl trend at our house. Here is another take in the form of a mexican meal.
Ingredients:
- 1/2 cup brown rice
- 1 tablespoons olive oil
- 1 pound 93/7 ground beef
- 1 (1.25-ounce) package taco seasoning
- 1/2 (15-ounce) can black beans, drained and rinsed
- 1/2 cup whole kernel corn, drained
- 20 cherry tomatoes, halved
- 1 small avocado, cut into slices
- 1/4 cup shredded cheddar cheese
Instructions:
- In a large saucepan boil 1 cups water, cook rice according to package instructions; set aside.
- In a small saucepan boil 1 cup water, and cook corn according to package instructions; set aside.
- Heat olive oil in a large pan and add ground beef and cook until beef has browned, making sure to crumble the beef as it cooks; stir in taco seasoning. Drain excess fat.
- Divide rice into bowls and top with ground beef mixture, black beans, corn, tomatoes, cheese, and avocado.
