Maggie’s Menu: Spicy Smoked Shrimp

We aren’t shy about trying new things on the smoker, but hadn’t ventured into smoked fish. Last night we tried smoked shrimp using a favorite spicy recipe we usually do on the grill and really enjoyed the flavor. This would be great paired with pasta, rice, risotto- or served as an appetizer with a dip.
Ingredients:
- 2 large clove garlic
- 2 teaspoons coarse salt
- 1 teaspoon cayenne
- 2 teaspoon paprika
- 4 tablespoons olive oil
- 4 teaspoons fresh-squeezed lemon juice
- 1 pound shrimp, peeled, rinsed and dried
- Lemon wedges
Instructions:
- Heat a electric smoker to 250 degrees.
- Skewer shrimp.
- Mince garlic with salt; mix with cayenne and paprika, then make into a paste with olive oil and lemon juice.
- Smear paste on both sides of skewered shrimp.
- Lay skewers on rack in the smoker.
- Smoke for 45 minutes.
- Serve immediately or at room temperature, with lemon wedges.
This recipe yields about 4-6 servings
