Maggie’s Menu: Snowball Cakeballs
We live on the most lovely little block on Capitol Hill in DC. I tell people its a little bit like Sesame Street. There are people from all walks of life. People that have lived here their whole lives. People who just moved in. People with kids and grandkids. People without kids. Young people. Old people. Republicans. Democrats. Doctors. Lawyers. Military. Politicos. Retirees. Artists. Dog people. Cat people. Rabbit people! People of nearly every race and religion. But regardless of having differences in every imaginable way, our neighbors have sincere affection for one another and no doubt look out for each other. How special is that? Our best friends on the block host an annual caroling party. I’m serious! While we weren’t able to attend because my dear friend Ellen was in town from Germany, we sent along Christmas treats for the neighbors.
Ingredients:
- 1 package (8 oz) cream cheese, softened
- 1 package (10.5 oz) chocolate sandwich cookies (Note: I gluten free regular sandwich cookies found in the gluten free section)
- 12 ounces high quality white chocolate
- Iridescent clear sprinkles for decor
Instructions:
- Place cookies (the entire cookies, filling and cookie) in a ziplock bag and gently crush until crumbs are formed.
- Stir the crumbs with the cream cheese until combined into a sticky mixture.
- Using your hands, roll into 20 balls placing them on a parchment paper lined baking sheet with an edge.
- Freeze the cake balls for about 30 minutes.
- Coarsely chop the chocolate and melt according to package directions. Working with 1 truffle at a time, coat in chocolate.
- Place on a lined baking sheet.
- Top with sprinkles while the chocolate is still wet.
- Refrigerate cake balls for at least 10 minutes so the chocolate sets. Cake balls must always be chilled and will stay fresh for up to 5 days in the refrigerator.
- Place in cute takeout boxes and share with neighbors.
