Maggie’s Menu: Pumpkin Smoothie Bowl
Message from Maggie:
After making that Thai pumpkin soup, I had a little bit extra pumpkin left and created this pumpkin smoothie bowl.
Ingredients:
- ¾ cup pumpkin puree
- 1 banana
- ½ cup unsweetened almond milk
- 1 teaspoon pumpkin pie spice
- Recommended toppings: apple, walnuts, + chia seeds
Instructions:
- Combine smoothie bowl ingredients in a blender and pulse until smooth.
- Transfer to a bowl and cover with toppings.
