Message from Maggie:

After making that Thai pumpkin soup, I had a little bit extra pumpkin left and created this pumpkin smoothie bowl.

Ingredients: 

  • ¾ cup pumpkin puree
  • 1 banana
  • ½ cup unsweetened almond milk
  • 1 teaspoon pumpkin pie spice
  • Recommended toppings: apple, walnuts, + chia seeds

Instructions:

  1. Combine smoothie bowl ingredients in a blender and pulse until smooth.
  2. Transfer to a bowl and cover with toppings.
