Maggie’s Menu: My Grandma’s Strawberry Pie

Message from Maggie: My mom sent me this recipe this week after making it for my Aunt Marion’s birthday. This was my Grandma’s strawberry pie- and it isn’t the cleanest or healthiest recipe around but it is divine. I altered it a bit by making gluten free crust (see here) and brought it to my company’s summer party.
Ingredients:
- 1 pie crust (Note: See recipe here.)
- 2 pound strawberries, cleaned, dried, and cut in half
- 1c. Sugar.
- 3 T. corn starch
- 1c. Water
- Dash of salt
- 2 t. butter
- Juice of half a lemon
- 3 T. strawberry jello
Instructions:
- Make and cook pie crust. (Note: You can use a pre-made or try my gluten free version here.)
- Combine sugar and corn starch in pan.
- Gradually add water and salt to pan and bring to a boil over medium heat.
- Boil two min until thickened.
- Remove pan from heat and add butter, juice of half a lemon and jello.
- Stir to melt butter and dissolve jello.
- Once mixture is lukewarm, add strawberries to mixture in pan.
- Pour mixture into a pie shell.
