Maggie’s Menu: Happy MLK Jr. Day + Blueberry Galettes

Happy Martin Luther King, Jr. Day!
We celebrated the life and work of the King with dear friends over dinner last night. To honor this American dreamer, I brought along a patriotic dessert served hot with smoked ice cream (more on that tomorrow!).
In other news, I’m swooning over my new marble + wood tray. A thoughtful Christmas gift from my best friend Molly for xmas.
Ingredients:
Crust:
- 1 package pie crust dough (2 rounds of dough)
Filling:
- 2 cups blueberries
- 1/4 cup sugar
- 2 Tablespoons cornstarch
- 1 whole lemon
- 1 teaspoon vanilla extract
- Pinch of salt
Top:
- 1 whole egg
- White sparkling sugar
Instructions:
- Take pie crusts out of refrigerator and let them come to room temperature.
- Preheat the oven to 400º.
- Combine all ingredients for the filling into a bowl and mix well until the berries start to juice.
- Sprinkle your working surface with plenty of flour.
- Cut dough into 6 pentagon shapes.
- Top with blueberry filling, and fold the corners over to create a star, making sure to pinch the ends to make sure the dough keeps it shape while baking.
- Add extra filling if needed.
- Using pie crust scraps create stars and any other shapes you like before placing on top of galettes.
- Whip the egg and brush over the dough.
- Sprinkle dough with white sparking sugar.
- Bake for 30 minutes, or until edges are browned.
Yields 6 galettes
