Maggie’s Menu: Grilled Green Chicken

Message from Maggie: Using the same marinade we used on our grilled green shrimp, we tried it on grilled chicken and had great results. Build in some extra time for marinating with this summer recipe.
Ingredients:
- 1/4 t. red pepper flake (more if you like it spicy!)
- 5 sprigs parsley, minced
- 1/8 t. pepper
- 1 shallott, minced
- 1 T. lemon
- 1 T. lime
- 2 T. white wine
- 6 basil leaves, minced
- 2 T. olive oil
- Salt (to taste)
- 1 pound of chicken breasts
Instructions:
- Place ingredients in a small blender and blend until a consistency between a paste and a liquid forms.
- Place chicken in a ziplock bag and cover with marinade allowing to marinade for 2 hours or overnight.
- On a medium heat grill, grill chicken until cooked through at a 165 degrees internal temperature.
