Maggie’s Menu: Greek Chicken + Other Greek Acutraments

Message from Maggie: I’m always asking Mr. Magpie for suggestions on meals he’d like me to try making. This week he suggested Greek food.
Ingredients:
Chicken Marinade
- 1/4 cup olive oil
- 1/4 cup fresh squeeze lemon juice (about 3 lemons)
- 1 1/2 tsp red wine vinegar
- 2 tsp finely minced garlic
- 1 1/2 tsp dried oregano
- 1/2 tsp dried thyme
- 2 pounds of thin chicken breasts
Tzatziki
- 1/2 seedless english cucumber peeled
- 1 tsp sea salt
- 2 cups plain greek yogurt
- 3 cloves garlic, peeled and mashed into a paste
- 1/3 cup olive oil
- 1 T. red or white wine vinegar
- 1 T. minced fresh dill
Veggie Kabobs
- 4 peppers
- 1 large red onion
- Olive oil
- Skewers
1 large cucumber sliced
1 container of hummus
1 bag of rice
Instructions:
Chicken
- Mix chicken marinade ingredients.
- Place chicken in a zip lock bag and pour marinade ingredients over it.
- Allow chicken to marinade for 4 hours or overnight.
Veggie Kabobs
- Cut peppers and onions into 2 x 2 inch squares.
- Toss in olive oil.
- Place on metal skewers.
Tzatziki
- Grate the cucumber using a box grater or food processor and toss with ½ tsp of the salt. Place the cucumber in a fine mesh sieve set over a bowl and drain for 10 mins.
- Next, take a handful of the cucumber and squeeze as much water from the cucumber as possible and put the squeezed cucumber in a bowl. Do the same for the rest of the cucumber.
- Add the rest of the ingredients along with the remaining salt and mix it well.
- Let the Tzatziki sit in the fridge for at least an hour to let the flavors come together.
Cucumbers
- Cut cucumbers in round slices.
- Put on plate with bowl of hummus.
Rice
- Place bag of rice in microwave for 90 seconds.
- Place cooked rice in bowl, cover, and set a side.
Cooking
- Place the chicken and the veggie skewers on the barbecue and cook them both for about 8 mins or until the chicken is cooked through.
Serve:
Serve chicken and kabobs with rice, cucumbers and hummus, and tzatziki.
