Maggie’s Menu: Freezing tomatoes

Message from Maggie: We are leaving for 10 days of vacation today and of course the tomatoes that we have been waiting for all summer are finally ripe. While we enjoyed fresh mozzarella and tomato salad last night and tomatoes in our omelets this morning, I froze the rest so that we can enjoy them in a sauce when we are back.
Instructions:
- Drop tomatoes into boiling water for 60-90 seconds
- Using a slotted spoon, transfer immediately into a bowl of ice water to cool. Skin will slip easily from the flesh.
- Remove stems and core tomatoes.
- Transfer into storage bags.
- Seal bags making sure to eliminate as much air as possible when sealing
- Store flat in the freezer.
