Maggie’s Menu: Egg in a Heart

Message from Maggie: We watched the classic movie Moonstruck last weekend and it inspired this easy Valentine’s Day breakfast.
Ingredients:
- 1 slice whole wheat or gluten free bread
- Olive oil
- Heart cookie cutter or sharp knife
- 1 large egg
Directions:
- Using a heart cookie cutter or a sharp knife use to make a heart shape in the center of a slice of bread.
- Brush bread with olive oil and place in a nonstick skillet over medium heat.
- Cook until it’s toasted. Flip, adding olive to the pan if needed
- Crack an egg on a flat surface (for a cleaner break). Drop the egg gently in the hole.
- Season with salt and pepper.
- Cover and cook until set but still soft.
- Serve warm.
