Maggie’s Menu: Basic Grilled Curry Chicken

Message from Maggie:  Its BEAUTIFUL in DC this weekend.  Brad and I planted our herb and vegetable garden and made plans for our shed remodel.  In the mean time I organized, purged, and labeled whats left in the shed.  Tonight we are relaxing and enjoying guac and chips before chicken on the grill served with green beans and brown rice.

Ingredients:

  • 2 tablespoons Olive oil
  • 2 teaspoons Curry Powder
  • 1 teaspoon Garlic Salt
  • 1 teaspoon Onion Powder
  • 1 teaspoon Paprika
  • 1 1/2 pounds boneless skinless chicken breast halves

Instructions:

  1. Mix olive oil, curry powder, garlic salt, onion powder and paprika in tiny bowl.
  2. Place chicken in ziplock bag and add curry mixture.
  3. Refrigerate 30 minutes or longer.
  4. Remove chicken from marinade.
  5. Grill over medium until chicken is cooked through.

  2. Place chicken in large resealable plastic bag add curry mixture.
  3. Refrigerate 30 minutes or longer for extra flavor. Remove chicken from marinade.
  4. Grill over medium-high heat 6 to 7 minutes per side or until chicken is cooked through.
