Maggie’s Menu: Crispy Rosemary Potatoes

Message from Maggie: My oldest friend Laura made these potatoes when I was visiting her a few weekends ago. The parchment paper is key in making them crispy!
Ingredients:
- Small potatoes (Note: I used small red potatoes and fingerling)
- Rosemary
- Olive oil
- Salt and pepper to taste
- Parchment paper
Instructions:
- Preheat oven 350 degrees.
- Cut up potatoes into small bites.
- Mince rosemary.
- In a large bowl, toss potatoes with olive oil and minced rosemary and sprinkle with salt and fresh cracked pepper.
- Lay out potatoes on parchment paper lined cookie sheet.
- Let cook until golden brown and crispy (30-40 mins- very forgiving.)
