Maggie’s Menu: Christmas Themed Green Smoothie Bowl

In this edition of confessions of a registered dietitian, I am admitting that I’ve never been big on breakfast. Ever since I was little I have been a chronic first meal skipper. When I was little, after being badgered at my own house, I would go to my best friend Laura’s house where her mom Kathy would rattle off breakfast options, before Laura and I left for the bus stop. I know, I know. Is the most important meal of the day and the benefits are endless. But sometimes knowledge isn’t power. In an effort to become a breakfast eater, I have been innovating with morning options like those found here here here and here. Here is another idea for christmas inspired version of a green smoothie bowl to enjoy over the holidays.
Ingredients:
- 1-2 cups spinach
- 1 frozen banana, peeled and sliced
- 1/2 cup frozen pineapple
- 1/2 cup 0% plain Greek yogurt
- 1/2 cup coconut water (I used pineapple flavored)
- Toppings: strawberries, raspberries, pomegranate, coconut, kiwi
Instructions:
- Add all of the essential ingredients to the blender and blend on high for at least 2 minutes or until smooth.
- Top with optional toppings.
