Maggie’s Menu: Chocolate Chip Bread

Message from Maggie:  My in-laws were visiting a few weekends ago and I like to have a quick bread or muffins around when we have visitors.  I created this bread by altering a recipe from the Hungry Couple + it was a hit!

Ingredients: 

  • 2 Cups all purpose flour
  • 1 Teaspoon baking powder
  • 1/2 Teaspoon salt
  • 1 Stick unsalted butter
  • 1 Cup sugar
  • 1 Egg
  • 1 Cup milk
  • 1 Teaspoon vanilla
  • 1 Cup chocolate chips (Note: I used mini chocolate chips)

Instructions:

  1. In a large bowl, beat together the butter, cup of sugar, egg and vanilla until smooth.
  2. In a separate bowl, combine the flour, baking powder and salt.
  3. Alternate adding the flour mixture and the milk into the batter just until combined.
  4. Fold in the cup of chocolate chips.
  5. Pour the batter into a buttered and floured loaf pan.
  6. Bake in a pre-heated 350 degree oven for 50 – 55 minutes, or until a cake tester comes out clean.
  7. Makes approximately 10 servings.
