Maggie’s Menu: Smoked Vanilla Ice Cream
Message from Maggie:
This weekend we were tasked with the dessert course at a friend’s dinner party and we wanted to bring along something special. I had read about smoked ice cream and figured it was something weird and worth trying on our adventurous friends. The smoking lent a kind of marshmallows over a campfire taste and paired nicely with my blueberry galettes.
Ingredients:
- Cherry wood chips
- Vanilla ice cream
- Ice cubes
Instructions:
- Set up your smoker following the manufacturer’s instructions to 275 degrees F.
- Add wood chips to the smoker.
- Scoop ice cream into a metal baking pan.
- Fill a second metal baking pan with ice cubes.
- Place ice cream pan on top shelf of smoker.
- Place ice filled sheet pan on shelf below ice cream.
- Smoke for 7 minutes.
- Remove and refreeze ice cream.
