Message from Maggie:

This weekend we were tasked with the dessert course at a friend’s dinner party and we wanted to bring along something special.  I had read about smoked ice cream and figured it was something weird and worth trying on our adventurous friends.  The smoking lent a kind of marshmallows over a campfire taste and paired nicely with my blueberry galettes.

Ingredients:

  • Cherry wood chips
  • Vanilla ice cream
  • Ice cubes

Instructions:

  1. Set up your smoker following the manufacturer’s instructions to 275 degrees F.
  2. Add wood chips to the smoker.
  3. Scoop ice cream into a metal baking pan.
  4. Fill a second metal baking pan with ice cubes.
  5. Place ice cream pan on top shelf of smoker.
  6. Place ice filled sheet pan on shelf below ice cream.
  7. Smoke for 7 minutes.
  8. Remove and refreeze ice cream.
