My friend Lindsay sent me inspiration for this idea using a pumpkin and guacamole dip.  As a part two to my Healthy Halloween Fruit Snacks post, here’s another take on a healthy halloween with homemade hummus and veggies. Creep it real folks!

Ingredients:

  • 2 cups drained well-cooked or canned chickpeas, liquid reserved
  • 1/2 cup tahini (sesame paste), optional, with some of its oil
  • 1/4 cup extra-virgin olive oil, plus oil for drizzling
  • 2 cloves garlic, peeled, or to taste
  • Salt and freshly ground black pepper to taste
  • 1 tablespoon ground cumin
  • Juice of 1 lemon, plus more as needed
  • Orange pepper, carved into a jack-o-lantern
  • Vegetables to use for dipping (Note: I used carrots, peppers, celery, and broccoli)

Instructions:

  1. Put chickpeas, tahini, olive oil, garlic, salt and pepper, cumin, and lemon juice in food processor and begin to process; add the chickpea liquid or water as needed to allow the machine to produce a smooth puree.
  2. Taste and adjust the seasoning.
  3. Carve orange pepper into a jack-o-lantern with a wide mouth.
  4. Place jack-o-lantern pepper on a plate and scoop hummus into and flowing out of it’s mouth.
  5. Place dipping vegetables around plate.

Yields about 10 servings
