Make: Homemade Ice Cream Sandwiches

Message from Maggie: I created homemade ice cream sandwiches this weekend for Adam’s 30th birthday. They were a huge hit and couldn’t be simpler.
Ingredients:
- Favorite cookie recipe (Note: I used this recipe but replaced chocolate and mint chips for M+Ms to make these more colorful)
- Favorite flavor of ice cream (Note: I used French vanilla)
- Plastic sandwich bags
Instructions:
- Bake cookies according to recipe and allow to cool completely on a wire rack.
- Turn half the cookies upside down on counter.
- Let ice cream soften for a few minutes and then put a scoop onto each cookie.
- Place another cookie on top of ice cream and press down gently creating a cookie sandwich.
- Package each cookie sandwich in sandwich bags and fold to close.
- Place sandwich bags in a dish in the freezer.

- This recipe can be made dairy free by using dairy free ice cream.
- This recipe can be made gluten free by using a gluten free cookie and ice cream.
- This recipe can be nut free by using nut free cookies and ice cream.
- This recipe is vegetarian.
