Maggie’s Menu: Curried Honey Mustard Chicken

Message from Maggie: I decided to veer from an old favorite and try a new version of curry chicken. This is an easy marinade you can whip up before work and then throw on the grill when you are home.
Ingredients:
- 1/3 cup olive oil
- 1/3 cup honey
- 1/4 cup Dijon mustard
- 4 teaspoons curry powder
- 1 pinch ground cayenne pepper
- 4 skinless, boneless chicken breasts (Note: I like to use the thin variety because they cook quickly.)
Instructions:
- In a medium bowl combine olive oil, honey, mustard, curry powder and cayenne powder.
- Place chicken breasts in a large ziplock bag and pour honey/mustard mixture over chicken.
- Place in refrigerator to marinate for at leat 4 hours or overnight.
- Grill until cooked through.
