Maggie’s Menu: Brown Rice with Toasted Pine Nuts

Message from Maggie: I jazzed up brown rice with some toasted pine nuts and shallots to serve with the curry chicken and it made for a delicious and easy side.
Ingredients:
- 1/4 cup pine nuts
- 1 tablespoon olive oil
- 1/2 small shallot
- 2 cup brown rice, cooked
Instructions:
- Spread pine nuts on baking sheet and bake in oven set at 350 degrees until golden brown.
- Mince shallots.
- Put olive oil and onion into a sauce pan and saute until softened.
- Add cooked brown rice.
- Toss in pine nuts and serve.
