Maggie’s Menu: Smoked Salsa

We have thoroughly been enjoying our new smoker (see all our smoked recipes here). Recently we are venturing beyond meat into smoking veggies, too. Yesterday we were invited to our friends Helena and Jordan’s for dinner and while she insisted we couldn’t bring part of the meal I wanted to make a special hostess gift. I came up with this smoked salsa, put it in a beautiful jar, and tied it with a bow.
Ingredients:
- 8 tomatoes, cut in half lengthwise
- 6 yellow and red sweet mini peppers, cut in half lengthwise
- 3 green hotties peppers, cut in half lengthwise
- 1 large red onion, cut in half lengthwise
- Juice of about 3 limes
- 1 cup of cilantro
- Salt and pepper
- Hot red pepper flake
Other items:
- Hickory wood chips for smoker
- Tortilla chips for serving
Instructions:
- Set up your smoker following the manufacturer’s instructions and preheat to 225 degrees. Add wood as specified by the manufacturer.
- Place the tomatoes, peppers, and onion cut sides up in the smoker. Smoke the vegetables long enough to impart a smoky flavor, but not so long that you cook them about 30 minutes.
- Transfer the vegetables to a platter and let cool to room temperature.
- Remove skins of tomatoes- they will easily peel off. Remove tomato cores and as many seeds as possible. Coarsely chop tomatoes and place in a large bowl.
- Cut stems off peppers and coarsely chop and place into large bowl.
- Coarsely chop onion and place in large bowl.
- Remove 1/3 of the mixture from the large bowl and using blender mix until blended but not totally liquid.
- Add blended mixture back into large bowl.
- Stir in the cilantro, lime juice, salt, pepper, and hot red pepper flake to taste.
- Serve with tortilla chips or on top of your favorite dish.
